Nanie's Apple Fritters

Yields: About 12 fritters
Ingredients:
Apples:
– 3–4 large Gala apples, diced
– 2 tablespoons lemon juice
Dough:
– 1 1/2 cups all-purpose flour
– 1/2 cup sugar
– 3 tablespoons melted butter
– 1/2 teaspoon nutmeg
– 1/2 teaspoon cinnamon powder
– 1 1/2 teaspoons baking powder
– 1 large egg
– 1/2 cup milk
– 1 tablespoon vanilla extract
Glaze:
– 3 cups confectioners’ sugar
– 6 tablespoons milk
– 1/2 teaspoon cinnamon powder
Directions
1. In a bowl, toss diced apples with lemon juice and set aside.
2. In a separate large bowl, mix flour, sugar, nutmeg, cinnamon, and baking powder.
3. Create a well in the center of the dry mix. Add egg, milk, melted butter, and vanilla. Stir until just combined.
4. Gently fold in apples until coated.
5. Heat oil in a deep pan over medium-high heat.
6. Scoop batter using a greased ice cream scoop and drop into hot oil. Fry 2 minutes per side, until golden brown.
7. Remove and drain on paper towels.
8. Mix glaze ingredients in a bowl. While fritters are still warm, dip them into the glaze and set on a wire rack to set.
Note: Best enjoyed warm and fresh.
