Taco Ranch Bites

Ingredients

1 lb lean ground beef

1 packet (1 oz) taco seasoning mix

1 can (10 oz) chopped tomatoes with green chiles (undrained)

2 cups shredded cheddar cheese

1 bottle (8 oz) ranch dressing or sauce

5 packages (15-count each) mini phyllo cup shells (75 total)

Directions

Preheat oven to 375°F (190°C).

In a skillet over medium heat, cook ground beef until browned. Drain excess fat.

Stir in taco seasoning and tomatoes with green chiles (with juice). Simmer for 5–7 minutes until thickened.

Arrange phyllo cups on a baking sheet. Fill each shell with the taco mixture, then top with shredded cheddar.

Bake for 8–10 minutes, or until cheese is melted and shells are golden.

Drizzle with ranch sauce just before serving or serve on the side for dipping.
