Grilled Chicken Skewers

1/2 c. smooth peanut butter
1/4 c. honey
1/4 c. soy sauce
1 tbsp. minced fresh ginger
1 tsp. crushed red pepper flakes
1/2 tsp. hot chili oil
Juice of 2 limes
1 tbsp. very hot water, as needed
Vegetable oil, for the grill
2 lb. chicken tenders, cut in half lengthwise
1 1/2 tsp. kosher salt
1 tsp. black pepper
20 to 25 (6-to 8-inch) wooden skewers, soaked in water
1/2 c. fresh cilantro, minced
Good-quality barbecue sauce, for serving
Directions
Preheat a grill or grill pan to medium heat.
For the peanut sauce: In a blender, combine the peanut butter, honey, soy sauce, ginger, red pepper flakes, chili oil, and lime juice and blend, adding the hot water, 1 teaspoon at a time, if necessary, to make it very smooth. Transfer the sauce to a small dish, cover, and set aside.
Brush the grill with vegetable oil.
Pat the chicken dry and season with the salt and pepper. Thread the chicken onto the skewers and grill until the chicken is cooked through, 2 to 3 minutes per side. Transfer to a serving platter and sprinkle with the cilantro.
Serve the chicken skewers with the peanut sauce and barbecue sauce for dipping.
