Loaded Hasselback Baked Potatoes

  • 1/4 butter or olive oil

  • 2-3 cloves of garlic, minced

  • fresh herbs like rosenary or thyme

  1. Wash and scrub the potatoes to remove any dirt. You can peel them or leave the skin on for a more rustic texture.

  2. Place each potato between two chopsticks to prevent cutting all the way through.

  3. Slice the potatoes crosswise into thin, even slices, while avoiding cutting all the way through.

  4. Mix the butter (or olive oil) with salt.

  5. Brush the potatoes with the butter (or olive oil).

  6. Place the potatoes on a baking dish and cover with foil. The foil helps the potatoes cook through without excessive browning.

  7. Bake the potatoes in the oven at 200C for about 1 - 1,5 h. The exact cooking time may vary depending on the size and type of potatoes.

  8. Make the herb butter by mixing the butter (or olive oil), garlic, herbs and salt together.

  9. Remove the potatoes from the oven and add cheese between the slices.

  10. Brush the potatoes with herb butter.

  11. Increase the oven heat to 220C.

  12. Return the potatoes to the oven (WITHOUT FOIL) and bake for about 10-15 minutes or until the potatoes are crispy on top.
