Big Pot o' Vegetarian Corn & Bean Chili

Ingredients

Vegetables & Aromatics:

1 green pepper, chopped

1–2 onions, chopped (depending on size)

2–3 cloves garlic, chopped

1 (10 oz) package frozen corn or fresh corn from 3 ears

5–6 mild dried chilis (California, guajillo, poblano, or ancho), deseeded & chopped (optional)

1–2 chopped fresh chilis (optional)

Spices & Seasonings:

2 Tbsp chili powder (or sub 1 tsp for chipotle chili powder)

1 Tbsp smoked paprika

1 tsp cumin

1 tsp coriander (optional)

1 tsp oregano

1 bay leaf

1 tsp fennel seeds (optional)

1–2 tsp Worcestershire sauce

1 Tbsp molasses (optional)

~2 tsp salt (smoked if available)

Several drops of hot sauce (optional)

Canned & Pantry Items:

3–4 cans beans (pink, pinto, black, or kidney)

1 can crushed tomatoes (20–24 oz)

2 Tbsp tomato paste or 1 (15 oz) can diced tomatoes

1–2 cans cooked hominy

1 (20 oz) can water or broth

1–2 canned chipotle chiles in adobo, chopped (optional)

Strip of kombu seaweed (optional, aids digestion)

TVP (texturized vegetable protein) (optional)

1 can beer (variation)

Optional Umami Boosters (if needed at end):

1 bouillon cube

1 Tbsp miso
