Creamy Garlic Chicken & Chips

38g PRO, 50g CHO, 14g FAT

500g of uncooked potato

1 tsp of garlic salt

2 tsp of oil

200g of uncooked chicken breast

1 tsp of paprika

Salt/pepper

Broccoli/broccolini

Light oil spray

1 red onion, diced

2 cloves of garlic, minced

60ml of light cream

1 reduced salt chicken stock cube mixed with 250ml of boiling water (use more water if needed)

1 heaped tsp of Dijon mustard

Fresh parsley, chopped

Directions

Wash the potatoes and cut into chips (I like to leave the skin on). Season with garlic salt and pepper. Drizzle over 2 tsp of olive oil (add more if you need). Air fry or cook in the oven at 200°C for 25-30 mins until soft.

Boil the broccoli until soft.

Season the chicken with paprika, salt and pepper.

Spray a pan with oil and place down the chicken breasts on a medium heat. Cook on either side for 5-10 minutes. Remove from the pan and set aside once cooked.

On the same pan, add the garlic and red onion with a dash of water. Stir and fry for 2 minutes.

Pour in the chicken stock and light cream. Mix in the dijon mustard and the chopped parsley. Season with pepper. Let the sauce come to a boil then reduce the heat to simmer. Once it thickens up and reduces add back in the cooked chicken.

Coat each side of the chicken in the sauce and simmer for a few more minutes.

Serve and divide the chips, broccoli, chicken and sauce into two portions.
