This is my new series where I'm going to share a new recipe every week - something you can eat in front of the telly...something you can eat with a big pile of chips!!
Do you remember the Creamed Spinach and Shallots recipe I shared the other week? Loads of you said it would be really good in a toastie...and you were right!!
This is Cheesy Creamed Spinach & Ham Toastie and it is STUPIDLY good! The perfect way to start Friday Night Chip Club! 💃

4 thick slices of white bread
2 large slices of ham
A large handful of grated cheese
Oil for frying
Butter for spreading
You're going to need some of my leftover creamed Spinach - I'll pin the recipe reel to the top of my page.
Toast one side of all four slices of bread. Spread a layer of creamed Spinach over 2 of the toasted sides of the bread
Layer with sliced ham and grated cheese. Season with salt and pepper
Directions
Place the other slices of bread, toasted side down on top of the sandwiches.
Butter the top of the sandwich, right up to the edges.
Heat a good glug of oil in a large non-sticj frying pan. Place the sandwiches Butter side down in the pan and fry gently until golden brown.
Butter the top of the other side, flip it over and fry until the cheese has melted and the toast is golden and crispy!
