Creamy Chicken & Bacon Rice

Ingredients

Spray oil

500g chicken breast, diced

1 tbsp chicken seasoning

150g lean diced bacon

1 onion, finely diced

3 tsp garlic purée

1 tsp dried parsley

1 tsp dried chives

1/2 tsp dried oregano

300ml chicken stock

100ml single cream

500g cooked basmati rice (microwave pouches)

Salt & black pepper

100g grated cheddar

Directions

Spray a large pan with oil and cook the chicken with the seasoning until just browned.

Add the bacon and onion, cook until soft.

Stir in the garlic, parsley, chives and oregano, then pour in the stock and cream.

Simmer for a few minutes, then stir in the rice until hot and creamy.

Scatter over the cheddar, cover with a lid and let it melt.

Season to taste, garnish with fresh parsley and serve and enjoy!
