Mom’s Oat Bran Chocolate Chip Muffins

Ingredients

1 2/3 cups oat bran

1/3 cup toasted wheat germ

1/3 cup all-purpose flour

2 1/4 teaspoons baking powder

1/2 teaspoon salt

1/3 cup dark brown sugar

5 tablespoons canola oil

1 tablespoon pure vanilla extract

1 egg

2 tablespoons low fat sour cream

1 3/4 cups buttermilk

1/2 cup semisweet chocolate chips

Topping:

2 tablespoons unsalted butter, softened

2 tablespoons all-purpose flour

2 tablespoons sugar

Directions

  1. Preheat oven to 425 degrees.

  2. Combine oat bran, wheat germ, flour, baking powder, and salt. Set aside.

  3. In mixing bowl, combine brown sugar, canola oil, and vanilla extract.

  4. Add the egg and mix well.

  5. Add sour cream, milk, and buttermilk.

  6. Blend in the oat bran mixture and the chocolate chips. (Don’t over mix!)

  7. Pour into a greased muffin tin.

  8. Blend the butter, sugar, and flour for the topping into a crumbly mixture in a small bowl and sprinkle on to of the muffin batter.

  9. Bake for about 13 minutes.
