・3 Zucchini
・2 Roma Tomatoes
・1/2 Onion (White or Yellow)

Directions
Finely dice the onion and Roma tomatoes. Cut the zucchini, but keep the chunks larger so they hold their shape.
Drizzle olive oil in a pan and fry the onions in it until they soften and start browning. Add the zucchini and let them toast until you start seeing color. Cover pan with lid for 3-4 minutes to let soften.
Once all things in the pan are softened, add in the tomatoes and let them cook down. Mix in well and coat with a lot of pepper and a few cranks of salt. Up the heat by a little, and let the tomato juices come out. Once the olive oil starts turning tomato red, pull off the heat.
Serve with a flatbread of your choice.
Notes
(Note #1) Alternatively, if you want, you can grate some garlic into the recipe when you add the tomatoes, but this is not traditional.
