Denny’s Mexican Chicken Lasagna

1/2 yellow onion, finely diced
1-15oz can diced tomatoes, undrained
1-10oz can tomatoes with green chilies, undrained
1/2 cup jarred salsa
2 cloves garlic minced
1 pkg taco seasoning
1-15oz can black beans (drained and rinsed or undrained, your choice)
2 cups cottage cheese
2 cups shredded Mexican Blend cheese or cheese of your choice
10 uncooked lasagna noodles
1# boneless skinless chicken breast cut into cubes (or rotisserie chicken)
1/3 cup water
Directions
For sauce: In large saucepan combine onions, tomatoes, salsa, taco seasoning, beans and garlic and bring to simmer. Reserve 1 cup to cover bottom of baking dish.
Brown and lightly salt chicken in clarified butter😊or choice of oil. Drain and add to the sauce mixture and heat to simmer.
To assemble: Preheat oven to 375 degrees. Lightly grease a 9x13 pan. Evenly cover bottom of pan with the reserved sauce. Cover sauce with uncooked lasagna noodles using 4-5 to entirely cover. Use half of the sauce mixture to cover the noodles. Next, spread 1 cup cottage cheese and 1 cup of shredded cheese over meat sauce. Repeat layers, beginning with noodles and ending with shredded cheese on top. Pour the 1/3 cup water around edges of casserole. Tightly cover with foil and bake for 30 minutes, uncover and bake additional 10 minutes. Let stand for 10-15 minutes.

Dennis made this new recipe for the first time last night as we had some chicken thighs to use up. He liked many of the recipes ingredients but not necessarily the process so he made several alterations to it. We really enjoyed this and hope that you do too!
