Oatmeal Breakfast Bars

2 cups rolled oats
½ cup cane sugar, maple syrup, honey, or coconut sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon cinnamon
2 eggs
2/3 cup almond milk
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
optional mix ins
1-2 tablespoons almond butter
1-2 tablespoons flax seed meal
¼ cup walnuts (finely chopped) or other nuts
¼ cup dried cranberries
optional toppings
2 tablespoons chocolate chips
Directions
Preheat oven to 350°F. Line an 8-inch square pan with parchment paper hanging over the edge or grease the pan.
In a medium bowl, combine the dry ingredients including the rolled oats, sugar, baking powder, salt, and cinnamon together in a bowl.
In another large bowl, combine the wet ingredients including the eggs, milk, applesauce, and vanilla extract. Mix in the dry ingredients until combined.
Fold in the cranberries or other optional ingredients and spread combined mixture into prepared square pan. If using chocolate chips or nuts sprinkle those on top.
Bake in the preheated oven for 20 minutes or until edges are golden brown, turn oven off and leave for 5 minutes more. Allow to cool on wire rack for 5 minutes before slicing.
