Wasabi Caesar Salad with Cornbread Croutons

This is my new favorite salad and it’s not even close. We’re taking the classic Caesar and giving it a kick — adding wasabi and soy sauce to an otherwise very traditional Caesar dressing for a little Asian fusion, — then crowning it with crispy sweet/savory cornbread croutons. This flavor combination is crazy good… it might find its way on one of my menus soon!

WASABI CAESAR DRESSING
1 cup mayo
1 tbsp dijon mustard
1 tbspwasabi (to taste)
1 tbsp anchovy paste
2 tsps low-sodium soy sauce
1 tsp Worcestershire sauce
Juice of ½ lemon
1 tsp sugar
¼ cup fresh grated parmesan
1/4 cup good olive oil
Salt & pepper to taste
Whisk everything except the olive oil. Season to taste, then stream in the olive oil to finish.
CORNBREAD CROUTONS
Day-old cornbread, cubed
Olive oil + your favorite seasoning Toss, bake at 400°F for 5–10 min until crisp.
THE SALAD
Romaine, chopped
Cherry tomatoes
Candied pecans
Shaved parmesan
Toss greens with dressing, plate, top with croutons + pecans. Done.
