Directions
Chicken Sandwiches (Nagi)
Remove the meat from the roast chicken and finely chop or shred it.
Finely dice the celery, spring onion, dill, pickles/cornichons, and walnuts.
Mix the mayonnaise, sour cream, Dijon mustard, lemon juice, onion powder, garlic powder, salt, and pepper.
Fold through the chicken and chopped ingredients to make a creamy filling.
Butter the bread lightly.
Spread the filling generously between slices of bread.
Trim crusts if desired and cut into halves, fingers, or quarters.
Tip: The filling can be made a day ahead and refrigerated.
Smoked Salmon Sandwiches (Nigella-style)
Finely chop the dill and capers.
Mix with the cream cheese, lemon juice, and black pepper.
Lightly butter the bread if using.
Spread the cream cheese mixture on the bread.
Layer smoked salmon over the top.
Add very thin slices of red onion if using.
Top with the second slice of bread.
Trim crusts and cut into fingers or triangles.
Tip: Assemble a few hours before serving and refrigerate covered. Cut just before serving for the neatest appearance.

Serving Together
Arrange the chicken sandwiches and smoked salmon sandwiches on the same platter, alternating varieties. Cut into fingers or quarters for an elegant lunch, afternoon tea, or book-club gathering. A garnish of dill sprigs, lemon wedges, and a bowl of crisps on the side works beautifully.
