Hot And Sour Soup

Ingredients

2 C Water

2 T knorr chicken bouillon ( or whatever stock option you prefer)

1 14-16oz package firm tofu

1 8oz package sliced mushrooms

1 C canned bamboo shoots ( I just use 1 can)

1 tsp white pepper

1 T crushed red pepper flakes ( or 1/2 T cayenne powder)

2 T sesame oil

2 T dark soy (or 2T regular soy mixed with 1T brown sugar)

2 T regular soy sauce ( preferably low sodium)

1/3 C white vinegar

3 T cornstarch

3 T Water

3 beaten eggs

1/4 C Green onions

Directions

Heat water

Mix cornstarch + 3T water to make slurry.

Setaside

Add all ingredients to pot except slurry and eggs.

Heat soup to low simmer.

Add slurry and stir.

Slowly add eggs while slowly churning “stirring very slowly " the soup. This will make the egg ribbons.

Garnish wl green onions

Notes

You can always add some kind of protein to this if you want. Just add it at the beginning of the process when the only thing in the pot is water and bouillon.

It is best to hydrate your meat first with baking soda and water. This will make the meat plump and not hard and stringy
