Cake :
3 large eggs separated
3/4 cup white sugar
1 TBSP vanilla extract
1/2 cup oil see note
2/3 cup milk
1 1/4 cup flour with 1 TBSP Baking powder
Chocolate ganache
1 cup dark chocolate chips (50%)
4 TBSP of butter
About 4 TBSP of milk but see notes
Directions
CAKE
In a medium size bowl,beat eggs white to firm but not stiff.
In a large bowl beat the yolks for 1 mn,
Add sugar beat until sugar is melted.
Add vanilla,until incorporated.
Add oil until incorporated.
Add milk until incorporated.
Add flour mixed with baking powder,start slowly so flour does not fly around.
Fold in beaten egg whites 1/3 at a time.
HEAT OVEN TO 350 F
PAN
Cover a 13’ by 9’ rectangular pan with parchment paper,going over the 4 sides( this will help when removing the cake from pan and the paper from cake)
Pour batter in pan,spreading the batter with a spatula evenly if needed.
BAKE
Put pan in oven,and cook for 20 minutes ( I added 5 minutes might add 1 or 2 more next time)The cake should look golden, you can try the toothpick trick,I did and it came out clean but I did find some parts of the cake when I was cutting it were still wet However I don’t think it matters and your dad loved it lol would not want the cake to be too dry lol
Remove the pan from the oven,let it cool for maybe 20 mns and flip it on a board or a back of cookie sheet covered with parchment paper.Once flipped ,gently and carefully remove the paper from the cake,let it cook completely before cutting desired shapes.
I cut the edges this time.
Make your chocolate ganache.
Melt the chocolate in double boiler ,once melted add milk a bit at a time until ganache is smooth ,easy to spread.
Pour a bit on plate and dip all sides (3 sides?),then dip in shredded coconut .
