Tomato and Courgette Slice (gail’s Dupe

Ingredients

You will need…

2 tbsp EVOO

1 red onion, finely diced

2 courgettes, sliced

1 red pepper, diced

200g cherry/baby plum tomatoes, halved

8 eggs

100ml milk

Fresh mint

Fresh parsley

1 tsp wholegrain mustard

Handful of kalamata olives, halved

50g mature cheddar cheese, grated

Directions

Heat the EVOO in a frying pan, add the onion, courgette and red pepper and fry until everythibg is nice and soft

Add the cherry tomatoes and fry until they ahve softened. Then transfer all of it to a square baking tin.

In a bowl, whisk the eggs, milk, herbs, mustard and half of the cheese.

Pour the egg mix into the baking tin, mix well with the veg.

Top with the olives and remaining cheese and then bake for 25-30 mins at 180C fan.
