Spiced Cod with Couscous

Ingredients

1 teaspoon ground coriander

½ teaspoon paprika

½ teaspoon ground cumin

Coarse salt and freshly ground pepper

1¼ cups water

½ pound carrots (about 4 medium), quartered lengthwise and cut on diagonal

½ cup slivered almonds

½ cup raisins

¼ cup chopped fresh mint leaves, plus sprigs for garnish 1 tablespoon olive oil

4 skinless cod fillets (6 ounces each)

Lemon wedges, for serving

Directions

Preheat oven to 450°. Mix together coriander, paprika, cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper. In a 9-by-13 inch baking dish, mix together the water, carrots, couscous, almonds, raisins, mint, oil, 1 teaspoons salt, and 1/4 teaspoon pepper.

Place cod on top of couscous mixture, and season with spice mixture. Cover pan with aluminum foil; bake until fish is opaque throughout, 20 minutes.

Fluff couscous with a fork. Transfer fish and couscous mixture to plates. Top with mint, and serve with lemon wedges.
