Brown Butter Cookies That Will Never Cease to Get You a Comp

227 grams (1 cup) unsalted butter
250 grams (2 cups) all-purpose flour
1 teaspoon baking soda
3/4 teaspoon kosher salt
215 grams (1 cup) packed dark brown sugar
73 grams (1/3 cup) granulated sugar
2 large eggs room temperature
2 teaspoons vanilla extract
215 grams (1 1/2 cups) dark chocolate chopped
3 Skor bars, crushed
1 teaspoon espresso powder
Flaky sea salt to finish
Let the dough rest in the fridge for at least 30 minutes before baking
Directions
Bake at 375 for 9-13 minutes depending not the size of your cookies.
You can make massive cookies or aim for about 18 per batch (approximately 11 min bake time).
