1 cup packed light brown sugar

1/3 cup + 2 tbsp granulated sugar

1/2 cup neutral oil

2/3 cup plain unsweetened yogurt, room temperature

2/3 cup milk, room temperature

2 tsp vanilla bean paste

1 tsp apple cider vinegar

1 2/3 cups all-purpose flour

3/4 cup finely ground yellow cornmeal

2 tsp cornstarch

2 tsp baking powder

1/2 tsp baking soda

1 tsp fine sea salt

1/4 tsp ground nutmeg

Sugar Crust

1/4 cup coarse sanding sugar

2 tsp finely ground yellow cornmeal

Tiny pinch fine sea salt

Tiny pinch ground nutmeg

Directions

Preheat 350°F. Line a 9x5 loaf pan.

Stir together sugar crust ingredients.

Whisk sugars, oil, yogurt, milk, vanilla, and vinegar.

Add remaining loaf ingredients.

Mix just until combined. Rest 5-8 min.

Transfer to pan and smooth top.

Top evenly with sugar crust.

Bake about 45 min or until 205-210°F.

Cool in pan 60-90 min, then transfer to rack.

Chill 3-4 hours before serving.

Vanilla Glaze (Optional)

1 1/4 cups powdered sugar, sifted

3 tbsp + 1 tsp milk

1/2 tsp vanilla bean paste

Tiny pinch fine sea salt

Instructions

Whisk until smooth and pourable.

Spoon over slightly warm loaf.

Chill 3-4 hours before slicing.
