Ingredients

For the slaw: 220g green cabbage, thinly sliced 50g carrots, grated lOOg red cabbage, thinly sliced 2 spring onions, chopped 1/2 small red onion, thinly sliced 2 tbsp fresh parsley, chopped For the dressing: 1 tbsp cider vinegar 1 tsp lemon juice 2 tbsp light mayonnaise 1 tbsp sour cream 1 tsp Dijon mustard 2 tsp brown sugar 1 tsp honey Salt and black pepper

Directions

1 Toss all the ingredients for the slaw together in a bowl.

2 Whisk together all the ingredients for the dressing in a smaller bowl. Add to the slaw and toss until everything is evenly coated. Refrigerate for 30 minutes before serving.
