Koobeh Soup

Ingredients

Yellow onion

4-5 garlic cloves

Leeks

Carrots

Zucchini

Squash

Mangold leaves

Tomato

Canola oil

Soup powder

Salt and pepper

Paprika

Hawaiij powder

3 tbsp tomato paste

Directions

Dice onion

Slice garlic, leeks, carrots, zucchini (all thin circles)

Chop squash into cubes

Coarsely chop mangold

Soak tomato in hot water, peel skin and cut into 8 wedges

Sauté onion until transparent, add leaks

Add garlic

Add carrots and zucchini

Add soup powder, water, tomato paste and spices

Bring to a boil

Add squash

Turn heat to low and cook 15 minutes until squash softens

Before serving add mangold

Add koobeh when soup is warm and cook 20-30 minutes until they’re ready

Don’t let the water boil when koobeh is inside
