Cottage Cheese Chocolate Mousse

Ingredients

1 cup cottage cheese

1/3 cup full-fat coconut milk (from the top of the can)

1/4 cup cocoa powder

2-3 tbsp maple syrup

1 tsp vanilla extract

Directions

Add the cottage cheese, coconut cream (from the top of the can), maple syrup, cocoa powder, vanilla to a high speed blender or food processor.

Blend on high for 1–2 minutes until completely smooth and creamy, scraping down the sides as needed.

Transfer to jars or small bowls and refrigerate for at least 2 hours to set. Top with your favourite toppings and enjoy!
