Homemade Mint Chocolate Chip Ice Cream Recipe

Ingredients

1 can full-fat coconut milk

1/2 cup honey

1 tsp peppermint extract

2 cups heavy cream

2/3 cup chocolate

You can substitute a can of sweetened condensed milk for the coconut milk/ honey mixture**

Directions

In a saucepan, heat 1 can of coconut milk with 1/2 cup of honey over medium heat. Stir continuously until the mixture thickens, about 20-30 minutes.

Remove from heat and let it cool. Once cooled, stir in 1 tsp of peppermint extract.

In a stand mixer, whisk 2 cups of heavy cream on high speed until stiff peaks form.

Fold in the coconut milk & honey mixture.

Shave or chop 2/3 cup of chocolate into small pieces. Gently fold the chocolate into the ice cream mixture.

Pour the mixture into a loaf pan and spread it out evenly.

Cover and freeze for several hours or overnight until solid.

When ready to serve, take the ice cream out of the freezer and let it sit to soften to your desired consistency for scooping.
