Sweet Potato & Ground Beef Power Bowl with Cottage Cheese &

2 medium sweet potatoes, peeled and cubed
1 lb lean ground beef
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
1 avocado, sliced
1/2 cup cottage cheese
1/4 red onion, thinly sliced
2 cups baby spinach or kale
1 tbsp fresh lime juice
Fresh cilantro, for garnish
Optional: chili flakes, for a spicy kick
Directions
Preheat oven to 400°F (200°C).
Toss sweet potato cubes with olive oil, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, or until tender and slightly crisped.
While the sweet potatoes roast, heat a skillet over medium heat. Add ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 8–10 minutes. Season with salt and pepper.
In serving bowls, layer a bed of baby spinach or kale. Top with roasted sweet potatoes, cooked ground beef, and sliced avocado.
Add a scoop of cottage cheese in each bowl. Sprinkle with red onion slices, a squeeze of lime juice, and fresh cilantro. Add chili flakes if desired.
Serve warm and enjoy the balance of protein, healthy fats, and hearty carbs.
