Steak yaki udon

300-400g of thin steaks
2-3 tbsp sesame oil
1 red onion, cut into thin wedges
A pack of mangetout
70g baby corn, halved
2 baby pak choi, quartered
3 spring onions, sliced
3cm piece of ginger
2-3 large garlic cloves, crushed
1 tbsp mild curry powder, or use 1 tsp garam masala
4 tbsp soy sauce
4 packets of ready-to-cook udon noodles
2 tbsp of pickle brine
Optional: pineapple slices.
Directions
Slice the steak, onion, and spring onions. Cut the baby corn into 3cm pieces. Crush the garlic cloves. Finely chop the ginger
Add the sesame oil to a wok over a high heat. Add the onion and fry for 5 mins. Add the steak and fry until browned.
Next, stir in the mangetout, corn, pak choi and spring onions and cook for 5 mins more. Add the garlic, curry powder and soy sauce, and cook for another minute. If using pineapple, add it now.
Add the udon noodles along with the ginger and the pickle brine, and stir in 2-3 tbsp hot water until the noodles are heated through. Divide between bowls and serve.
