Rice and Beans With Sausage

1 tablespoon extra virgin olive oil
14 ounce package polska kielbasa (diced)
1 medium sweet onion (diced)
3 cloves garlic (minced)
2-3 cups brown rice (cooked)
4 teaspoons chicken bouillon seasoning (vegan for sensitivity friendly)
14 ounce can pinto beans (rinsed and drained)
1/2 teaspoon dried Italian seasoning
1/4 teaspoon Cajun seasoning
salt and pepper (to taste)
1/4 cup finely chopped fresh parsley
Directions
In a large nonstick skillet, heat the oil and butter over medium-high. Add the kielbasa and onion; sauté until onions become soft and translucent (about 3 minutes), stirring occasionally. Add in the garlic and cook until fragrant, about 20 seconds.
Over medium heat, stir in the rice, chicken seasoning, beans, Italian seasoning, Cajun seasoning, and salt and pepper. Add water, if needed to loosen the rice. Heat until warmed through. Taste and adjust all seasoning to your liking.
Remove from the heat and stir in the parsley.
Serve immediately and enjoy on its own or with a slice of cornbread!

12/11/2024 Really flavorful and easy to make! This recipe is a keeper. Even good without the kielbasa.
If using uncooked rice, follow the original recipe.
