Lemon Overnight Oats + Blueberry Chia Jam

Ingredients

Fresh, zesty, creamy, and packed with flavor. Perfect for meal prep or a dreamy breakfast treat!

For the oats:

1 cup porridge oats

1 cup milk of choice (I used oat)

3 heaped tbsp vegan Greek or coconut yoghurt

Small pinch of salt

1 tsp lemon zest

1 tsp vanilla extract

4 tbsp lemon juice (or juice of 2 small lemons)

2–3 tsp maple syrup (or to taste)

Walnuts- chopped for topping

Directions

Mix everything in a bowl, taste and adjust maple/lemon if needed. Cover + chill for at least 2 hrs or overnight.

Blueberry chia jam (makes extra):

300g blueberries

Squeeze of lemon juice

2 tbsp chia seeds

1 tbsp maple syrup

Heat blueberries, lemon juice + maple in a pan over low heat. Gently mash + simmer 5–10 mins until juicy and vibrant. Remove from heat, stir in chia seeds, and let it thicken. Store in a jar in the fridge for up to 1 week.
