Lamb Kebab Dinner

1 lb of ground lamb
1/4 cup of breadcrumbs (I use panko)
2 cloves garlic, minced
2 tsp ground coriander
2 tsp cumin
2 tsp paprika
1.5 tsp ground cinnamon
3/4 tsp cayenne pepper or chili powder
1 tsp salt
1/2 tsp black pepper
Directions
1. Preheat oven to 450 degrees. Line a cookie sheet with tin foil.
(Note: If cooking rice, start the rice first. Meat will cook very quickly.)
2. In a bowl, combine lamb with all other ingredients. Use your hands or a wooden spood to combine thouroghly.
3. Once ingredients are combined, place mixture on lined sheet. Use your hands to shape the mixture into a large rectangle. It should have square corners and be about 3/4 inch thick.
4. Pick one direction and just drag a rubber spatula through the rectangle. The edge of the spatula should be perpendicular with the sheet pan, creating "strips". Make sure you are making contact with the sheet pan with making lines. No need to push the strips apart, as the meat will contract with cooking.
5. Once the oven is preheated, place sheet pan in oven. This part will go quick. It usually takes 10-15 min in my oven. Ground lamb is considered safe when it reaches an internal temperature of 160°F. Optional: you can broil the top to get extra crispy.
6. While the lamb is cooking prepare your other sides! Maybe break out some pita or a nice cucumber salad...
7. Remove from oven when cooked to desired doneness. Transfer strips to plate lined with paper towels to absorb some oil.
8. Enjoy!
Notes
make it a meal by serving with rice or pita.
