Tomato Caper Snapper

2 Snapper (or Tilapia) Filets
1/4 Cup Flour
Salt & Pepper
2 Cloves Garlic, minced
1/4 Cup Onion, diced small
1/3 Cup Cherry Tomatoes, diced
1 Tbsp Olive Oil
2 Tbsp Butter, divided
3 Tbsp Capers
1/2 Cup White Wine
Pinch of Fresh Parsley, minced
Directions
Sprinkle each filet with salt and pepper and coat in a layer of flour.
Heat up the olive oil and 1 Tbsp of butter in a large skillet; cook each snapper filet for 2-3 minutes on each side or until golden and then remove from the pan (keep warm under a piece of foil).
Add the onion, garlic, cherry tomatoes capers and white wine to the pan; sauté until the wine has reduced by half (2-3 minutes); stir in the other Tbsp of butter.
Spoon the sauce over the fish and sprinkle with some fresh parsley on top - enjoy!
