3/4 cup plain flour
3/4 cup cornmeal
2 Tbsp sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup buttermilk, Or 1 cup of milk and 1/4 cup yogurt
3 Tbsp unsalted butter, melted and cooled
Whisk dry ingredients together in a bowl. Melt the butter and then add the rest of the wet ingredients. Mix everything together and stir until smooth.
Cook each pancake until golden on the bottom, about 1 1/2 minutes. Flip and cook the other side. Keep each batch warm in the oven while you work on the rest.
