High-protein Chocolate Cookie Mousse

The perfect healthy treat for this heat! Super high in protein, gluten-free and low sugar

1 16oz container cottage cheese

2 scoops chocolate protein powder

2 tbsp maple syrup or honey (optional – depends on how sweet your protein powder is)

Cookies of choice (I used @sietefoods)

1/4 cup chocolate chips

1 tsp coconut oil

Sea salt (for topping)

Directions

Add cottage cheese, protein powder, and sweetener to a blender and blend until smooth. Pour back into cottage cheese container

Stir in crushed cookies and smooth out the top. Add extra crushed cookies on top

In a bowl, add chocolate chips and coconut oil. Microwave 30 sec, stir, and repeat until smooth.

Pour chocolate over top of the cottage cheese mousse and spread evenly. Add sea salt.

Freeze until chocolate shell has hardened (10-15 min)

Keep stored in the fridge for a pudding consistency or freezer for an ice cream consistency. If freezing, let thaw 5-10 min before eating – enjoy!
