The Easiest Peach Galette You Can Make in 15 Mins and Devour

1 sheet puff pastry @dufourpuffpastrykitchen thawed according to package instructions;
1 lb peaches (about 2.5 peaches)
1/3 cup sugar
2 tbs butter, melted
1 tsp vanilla bean paste/extract
Course sugar for sprinkling
Powder sugar for dusting
Vanilla ice- cream for serving, optional but highly recommended
Egg wash:
1 egg + 1 tsp water
Directions
Wash and slice your peaches and mix them with sugar, melted butter and vanilla and set aside;
Lightly roll your puff pastry on a floured surface; add your filling in the center and optionally arrange them or simply just spread them; fold the edges and brush eggs wash and sprinkle coarse sugar;
Pop in the freezer for 10 mins to optimize puffing of your dough;
Bake in a preheated oven at 400 F for about 30 mins, broil for 2 mins;
Sprinkle powdered sugar, serve with vanilla ice-cream and indulge π
