Butternut Squash Sage Hand Pies

Ingredients

For Butternut Squash Filling:

1 whole butternut squash

8 tablespoon butter (melted)

1 egg

1 cup Monterey Jack or feta cheese

8 sprigs of fresh sage

For assembly:

8 tbsp melted butter

1 pack Phyllo dough

1 tbsp everything bagel seasoning

Directions

Method:

1. Wash, de-seed, peel and Roast butternut squash for 45 mins at 400 F. Let cool.

2. Heat up a small pan and add 8 tbsp of butter. Add in the sage until crispy. Take off heat. Set aside.

3. Scoop out the cooked and cooled butternut squash into a bowl. Add egg, cheese, melted butter, crispy sage into the mix. Combine well.

4. Take a sheet of Phyllo dough and brush with melted butter. Add another sheet oh Phyllo dough. Push both sides of the phyllo dough toward the center. Spoon 1/4 of the filling and fold the sides over the cover the filling. Flip the handles over, season with everything bagel seasoning and place in a parchment lined sheet tray.

5. Bake in a 400 F oven for 25 mins. Let cool and transfer to a serving platter. Serve w/ honey and Devour!
