Is anyone else dreaming of a European summer???? Frolicking with nowhere to be and nothing to do but drink yummy coffee and eat tasty treats????? JUST ME?! Wellllllp, we are headed to PARIS next month and I’m already CRAVING all the amazing sweets we are going to have hehe! And something I’m excited for are all the scones. 😍
These scones are giving soft, chewy, and just the right amount of sweet—made without butter, oil, or refined sugar. Perfect with coffee, post-lift, or honestly just straight out of the fridge.🤪
What you’ll need (makes 8):
1 cup oat flour
¼ cup almond flour
2 scoops vanilla or peanut butter protein powder (I used @steelsupplements)
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup unsweetened applesauce
¼ cup natural peanut butter
1 egg
3 tbsp honey
1 tsp vanilla extract
¼ cup chocolate chips
How to make them:
Directions
Preheat oven to 375°F and line a baking sheet with parchment.
In a bowl, mix applesauce, peanut butter, egg, honey, and vanilla until smooth.
Now, add in oat flour, almond flour, protein powder, baking powder, baking soda, and salt and mix until a thick dough forms. Then hand fold in chocolate chips.
Shape dough into a circle about 1 inch thick and slice into 8 triangles.
Slightly separate and bake for 15–18 minutes, until golden and set.
Let cool and enjoy!
