Oatmeal Cake (Claudette)

Ingredients

1½ cups boiling water

1 tsp soda

1 stick butter

1 tsp cinnamon

1 cup white sugar

½ tsp nutmeg

1 cup brown sugar

½ tsp salt

2 eggs

1 cup quick cook oats

1½ cups flour

Frosting:

6 tbsp butter

1 cup brown sugar

¼ cup evaporated milk

1 cup coconut

1 cup chopped pecan

½ tsp vanilla

Directions

Pour water over oats; add butter and let stand 20 minutes.

Beat sugars with eggs.

Sift flour, soda, cinnamon, nutmeg and salt.

Mix all together & beat well.

Bake in 350° oven for 35 minutes, in greased and floured 9x13 pan.

Frosting: Mix butter, pecans, coconut, brown sugar, and vanilla.

Spread over cake.

Return to oven boiler for 2 or 3 minutes.
