Tia Victoria's Rice Pudding

1 qt milk
5 tbsp sugar
1/4 cup rice
2 tsp vanilla
1/3 water
3 large eggs
Pinch salt
Directions
Boil rice in water over low heat til water is absorbed.
In non stick pan bring milk, sugar, salt, and vanilla to a boil. Stir in rice. Lower heat and cook 45-50 min. Stirring often.
Beat eggs for 8 min. Remove milk from heat. Add a little milk to eggs. Beat. Slowly continue adding more milk, beating constantly. Pour mixture back into pan and cook stirring constantly til pudding begins to thicken. Remove from heat and pour into serving dish. Sprinkle with cinnamon. Cool completely in fridge.
