Pan Con Tomate

4 beef tomatoes

4 slices rustic bread

½ tbsp sherry vinegar

1 garlic clove

Extra virgin olive oil

Flaky sea salt

Black pepper

How to Make It:

1️⃣ Grate the tomatoes – Set a sieve over a bowl, grate the tomatoes and season with salt. Let sit for 10 mins to drain.

2️⃣ Toast the bread – Grill until golden, then rub with garlic.

3️⃣ Assemble – Stir vinegar through the tomatoes, season, then spoon onto toast. Drizzle with oil, sprinkle chives, and serve.

Directions

Add mozzarella or your favourite protein if you like, or keep it classic!
