Maple Orange Salmon Cure

1 quart brown sugar
2 cups real maple syrup
1 1/2 cup kosher salt
Zest of 4 oranges

Mix together. Submerge salmon 8-12 hrs. Pull pat dry and put on sheet pan uncovered in walk-in overnight. Smoke at 165 degrees for 2-3 hrs till just cooked and semi opaque
