Chicken with Long Rice (Percy)

Ingredients

25Lbs Chicken Thighs

10 Gallons Water

20" of crushed ginger

40 garlic cloves crushed

20 Pkgs Long Rice

16 bunches Green onions

2 chicken base concentrate (for 10 gallons)

Directions

Cover chicken with water

Add salt, ginger, and garlic

Boil until tender

Remove chicken and add broth to chicken base concentrate, cool.

Bone chicken and cut in to fine pieces

Remove ginger and garlic from broth

Soak long rice in warm water

When limp, cut into 6" lengths with scissors or knife

Combine long rice, chicken and broth

Simmer for 20 minutes or until hot

Garnish with chopped green onions
