SAUCY ORANGE SESAME CHICKEN

Ingredients

4 pounds (1.8 kg) boneless skinless chicken breasts, cut into bite-size pieces

2 cups (475 ml) chicken broth, store-bought or homemade (page 310)

1 cup (235 ml) freshly squeezed orange juice

1 cup (235 ml) rice vinegar

1 cup (235 ml) low-sodium soy sauce

½ cup (170 g) honey

⅓ cup (75 g) brown sugar, packed

2 tablespoons (12 g) freshly grated orange zest

2 teaspoons (2 g) crushed red pepper flakes

½ teaspoon ground ginger

½ teaspoon freshly ground black pepper

½/ cup (65 g) cornstarch

FOR SERVING:

3 cups (474 g) cooked rice (white or brown)

Sesame seeds (for garnish)

Sliced green onions (for garnish)

Directions

1. Line the slow cooker with a slow cooker liner, if desired, to make cleanup easier.

2. In a medium mixing bowl, mix together the chicken broth, orange juice, vinegar, soy sauce, honey, brown sugar, orange zest, red pepper flakes, ginger, and pepper to create a sauce.

3. Layer the sauce and chicken in the slow cooker in the following order: ⅓ of the sauce, a layer of chicken, ⅓ of the sauce, a layer of chicken. and then the final ⅓ of the sauce.

4. Cover the slow cooker. Cook on LOW for 4 to 6 hours.

5. When the chicken is fully cooked, carefully remove the chicken from the slow cooker and place in a bowl. Cover with foil to keep it warm.

6. Add the cornstarch to the sauce that is in the slow cooker and whisk until it is mixed in well.

7. Cover and cook on HIGH for 1 hour, or until the sauce thickens.

8. Add the chicken back to the sauce and serve over cooked rice.

9. Sprinkle sesame seeds and green onion over the chicken and rice before serving.
