Ingredients

one large sweet potato, cubed into 1/2" cubes

1 cup basmati rice, rinsed of starch

1 block of frozen spinach

1 pound of ground pork or beef

3 cups chicken or beef bone broth/stock

three sweet bell peppers (red, yellow, orange), diced into 1" chunks

1 15 ounce can lentils

salt

paprika

garlic

Directions

Microwave the cubed sweet potatoes 10 minutes until soft

place all remaining ingredients in Instant Pot: beef, then rice, then stock, then vegetables

Instant Pot High Pressure Cook 1 minute sealed, quick release

Mix in sweet potatoes, lentils and frozen greens to thaw
