Mint Ice Cream Dessert

1.5 c. vanilla wafer crumbs
2 oz. unsweetened chocolate
2.5 c. powdered sugar
2/3 c. butter
2 eggs, separated
1 tsp. vanilla
1/2 gal. mint choc. chip ice cream
Directions
Cover bottom of 9x13" pan with 1 c. crumbs. Melt butter with chocolate. Beat egg yolks with electric mixer and add powdered sugar, chocolate mixture, and vanilla. Continue mixing with electric mixer until smooth. Beat egg whites and blend into mixture. Spread over crumbs in pan. Freeze. Spead softened ice cream over chocolate mix. Sprinkle with remaining crumbs.
Notes
leaving the ice cream in the refrigerator for a couple of hours does a great job of softening it up without melting it.
