Ingredients

1 can full fat coconut milk (powerful anti-inflammatory)

3 Tbsp pumpkin puree (improves insulin resistance and B-cell function)

1 tsp pumpkin pie spice + 1/2 tsp cinnamon (lowers blood sugar)

1/2 c plant-based milk

5 Tbsp granulated sweetener (I used allulose) - no added sugar

1 tsp vanilla

Directions

In a small saucepan, combine all ingredients except vanilla. Heat until boiling, then simmer for 5 mins

Stir in vanilla and pour into an air-tight container (I used a mason jar). This will keep in the fridge for 1-2 weeks!
