Kickass Apple Pie Cookie Dough

1/2 cup old-fashioned oats
1/2 cup oat flour
2 scoops vanilla protein powder
2 tsp honey
1 large Honeycrisp apple, diced very small
1/4 cup nonfat greek yogurt
1 tbsp maple syrup
2 tbsp lemon juice
1/2 tsp cinnamon
pinch of salt
1/2 tsp lemon zest (optional)
Directions
Heat a pan over medium-high. Add diced apples, maple syrup, cinnamon, salt, and optional lemon zest. Cook 5-7 minutes until softened. Set aside to cool slightly.
In a bowl, mix oats, oat flour, protein powder, honey, greek yogurt, and lemon juice until thick and sticky.
Mix in the cooked apples.
Transfer to a container, cover, and store in the fridge.
Keep refrigerated and enjoy within 5 days.
