Chicken Fried Rice

2 cloves garlic
1 tbs ginger
1 zucchini diced into 1cm cubes
1 & 1/2 cups of carrot peas & corn
500g chicken mince
3 tbs soy sauce
Spray oil
4 cups cooked rice
1 tbs oyster sauce
Directions
1. Heat oil in a large non-stick wok or frying pan over medium heat. Add onion, garlic, ginger and cook stirring, for 2-3 minutes, until onion is soften
Add mince and cook, stirring to break up lumps, for about 5 minutes or until cooked through.
2. Add zucchini and sauces to wok.Season with ground white pepper and stir-fry for 2 minutes or until well combined.
Reduce heat to low, cover and cook for 5 minutes. Stir through rice and peas corn & carrot, cover and cook for a further 5 minutes or until heated
