Ingredients

2 cup(s) french bread, stale and cubed

1 tablespoon(s) extra virgin olive oil

1 large English cucumber, cut in 1/2 inch cubes (1 cup)

1 large red bell pepper, chopped (1/2 cup)

1/2 cup(s) finely sliced green onions

4 cup(s) fresh parsley, chopped

2 medium tomatoes, diced

DRESSING INGREDIENTS

2 tablespoon(s) lemon juice

3/4 teaspoon(s) salt

1 clove(s) garlic, chopped

1/2 teaspoon(s) pepper

1 teaspoon(s) ground cinnamon

1/4 teaspoon(s) ground allspice

9 tablespoon(s) extra virgin olive oil

Directions

Preheat oven to 350 degrees F. Spread the bread cubes on a large baking sheet and toss with the oil.

Bake in the preheated oven until golden brown. Turn them every few minutes. They will take 10 to 20 minutes depending on how fresh the bread is.

Assemble the cucumber, peppers, and green onions in a large bowl. Leave out the tomatoes and parsley for now.

Blend the dressing ingredients until the salt dissolves.

Add parsley, tomatoes, and croutons.

Pour on the dressing and toss to coat everything.
