Garlic Parmesan Chicken Meatloaf

Ingredients

1½ lbs ground chicken

¾ cup seasoned breadcrumbs

½ cup grated Parmesan cheese

2 large eggs

4 cloves garlic, minced

½ yellow onion, finely chopped

¼ cup milk

2 tablespoons fresh parsley, chopped

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

¼ cup shredded mozzarella cheese (optional for topping)

1 tablespoon olive oil (for brushing)

Directions

Preheat oven to 375°F (190°C). Line baking sheet with parchment paper or lightly grease a loaf pan.

In a large bowl, whisk eggs and milk together.

Add breadcrumbs, Parmesan, garlic, onion, parsley, Italian seasoning, salt, and pepper. Mix well.

Add ground chicken and gently combine until just mixed.

Shape into a loaf on baking sheet or in loaf pan.

Brush surface with olive oil.

Bake for 40 minutes or until internal temperature reaches 155°F.

If using mozzarella, sprinkle on top and bake additional 5-10 minutes until cheese melts and internal temperature reaches 165°F.

Rest for 10 minutes before slicing and serving.
