Middle Eastern Chicken and Veg Tray Bake

Ingredients

Chicken:

200g chicken thigh

30g Greek yoghurt

2 tsp smoked paprika

2 tsp garlic powder

1/2 tsp cumin

1/2 tsp chilli flakes

1 tsp dried thyme

pinch of cinnamon

salt and pepper

Veg:

200g zucchini (courgette)

100g red capsicum (pepper)

100g red onion

1 tsp paprika

2 tsp garlic powder

salt and pepper

Garlic sauce:

40g Greek yoghurt

15g light mayonnaise

2 tbsps lemon juice

1 tsp dried dill

1 tsp minced garlic

Directions

Mix chicken thigh in bowl with all seasonings and Greek yoghurt as listed, until well covered. Lay on a lightly oiled oven tray.

Chop all the vegetables, lay on a tray and toss with seasonings. Cook both chicken and vegetables in the oven at 200°C for approximately 25 minutes. While it’s cooking, combine garlic sauce ingredients in small measuring jug and mix well.

Once everything is ready, serve it all in a large bowl and drizzle with garlic sauce.

Such a hearty winter meal that fills the soul and the belly! And if you wanted more carbs, it would go great with rice or potato.
