Cheesy sweet potato quesadillas

Ingredients

2 medium swet potatoes, peeled and chopped into small chunks 2 red peppers, deseeded and chopped 2 green chillies, deseeded and chopped 2 garlic doves, cmshed 1 tbsp olive oil Salt and black pepper 4 large tortillas 230g Mozzarella, grated 1 x 198g tin of sweetcorn, drained A handful of fresh coriander, chopped

To serve; Sour cream Salsa

Directions

1 Preheat the oven to 200°C/180°C fan/gas mark 6. Place the sweet potato, peppers, chillies and garlic on a large baking tray.

Drizzle with olive oil, season with salt and pepper and toss to coat. Roast in the oven for 18-20 minutes.

2 Lay the the tortillas on a flat surface. Top half of each with a quarter of the vegetables, Mozzarella, sweetcorn and coriander. Fold each tortillas in half over the toppings to form four small quesadillas.

3 Place on the baking tray and bake in the oven for five minutes until the cheese has melted. Sprinkle with extra coriander and serve with sour cream and salsa.
